They're not fat, it's all muscles. Just imagine how much the player has to carry with him. If one block is 1 cubic meter and the character can carry around stacks and stacks of 64 blocks each, consider now that the blocks are made of gold, the heaviest material in minecraft, and the poor guy must have the muscles to carry it all and jump with it. He's a beast.

He's also able to survive falls of up to roughly 75.5 feet. Impressive.

Basically, Steve is Superman.
