Why not say 'it' instead of giving the thief a gender? I mean, goblins aren't supposed to be humanised: they're filth and closer to animals, it would hurt no one to be defined as 'it'.

That would make it sound like it's referring to the gold instead of the person, which will lead people to defend the gold pile instead. I thought about it, but I think we should just keep it as it is.
 
While it's not regarded as proper english, a extremely common substitute for an undefined gender is "them" (or "they" for "he" or "she").

Or just remember that orcs are basically men. Male at least. So one can kill him :)
