I'd suggest Medieval 2 and/or Attila. Attila? Why Attila? I'll tell you: Because Attila is the game which uses the mod Kingdoms 1212 AD - a new, fancy, high-late period Middle Ages mod which is well-polished, beautiful, and awesome.
